Almond Meal Cookies with Coconut and Dark Chocolate Chips

These cookies are a combination of three of my favorite treats! They are the perfect cookie when you are in the mood for a treat. They are very easy as well. 
Here is what you will need to make these yummy treat.
  • 1 1/4 cup Almond Meal
  • 1/4 cup Dark Chocolate, Chopped
  • 1/2 cup Shredded Coconut, Unsweetened
  • 1/2 tsp Baking Powder
  • 1/4 teaspoon Sea Salt
  • 1/3 cup Organic Brown Sugar
  • 1 Egg
  • 3 Tbsp Coconut Oil, Melted
  • 1/2 tsp Vanilla Extract
Now let's get started! 
In a large bowl, mix together the dry ingredients (almond meal, dark chocolate, shredded coconut, baking powder, salt and sugar).
In a small bowl, beat egg until it doubles in size and becomes a consistent color.Stir the coconut oil and vanilla into the egg
Pour the wet ingredients into the dry ingredients and mix until they're just combined.Let this combination chill in the fridge for at least 30 minutes, or even overnight.

Preheat the oven to 375 degrees. Grease a baking sheet.Shape the dough into 1" balls with about 1 1/2" of space between each.Press the balls down slightly to flatten.Bake these cookies for 7-10 minutes, you will see the edges start to brown.Let the cookies cool before serving.
