Chicken Fajitas With Homemade Seasoning

Every Tuesday we have mexican food or "Taco Tuesday" this week I decided to make chicken fajitas. I have been making my own fajitas seasoning now for a while. I started after reading an article on why you should make your own because of the hidden ingredients that are in packaged fajita seasoning. 

Here are some of the ingredients that really have no buisness being in fajita seasoning whey (milk), sugar, potato starch or modified corn starch, citric acid, maltodextrin, autolyzed yeast extract (a sneaky name for MSG), caramel color (sulfites) and cellulose. 

Yuck. Homemade seasoning tastes a lot better, is a lot better for you and saves you money! I would say that is a pretty great deal. :)

Here is what you need to make Homemade Fajita Seasoning:

1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon coconut sugar
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

I like to mix it all up in a jar like is pictured below since this recipe makes more than you will need. 2 tablespoons of the homemade seasoning is equivalent to one store bought package.
Ingredients for Chicken Fajitas:

1 pounds skinless, boneless chicken breasts, sliced against the grain into strips seasoned with salt and pepper
2 tablespoons olive oil
1 large onion, sliced lengthwise into 1/4-inch strips
3 bell peppers of various colors, sliced into 1/4-inch strips

Directions:

Start by heating the oil in a large pan. Add the chicken breasts and cook until the chicken loses its raw color. About 3 minutes.

Add the peppers and the onions to the pan. Cook for about 10 minutes or until peppers are tender.

Put 2 tablespoons of the homemade fajita seasoning into the mixture and heat until the sauce has thickened. If the sauce is too thick add some water to thin it out a bit.

That's it! I love how simple and easy fajitas are to make. 

We like to eat our fajitas on corn tortillas with salsa, sliced avocado, and greek yogurt.
