Chocolate Chip Oatmeal Cookies

These yummy and nutritious cookies hit the spot today on this chilly day in Belgium. If you are looking for the perfect Sunday treat but don't want to totally break your healthy eating you have found the perfect recipe. :)

Ingredients: 

1 Cup Oat Flour
3/4 Cup Rolled Oats
1/4 Tsp Salt
1/8 Tsp Baking Soda
1/2 Tsp Baking Powder
3 Tbsp Shredded Coconut
1/3 Cup Dark Chocolate Chips
1/4 Cup Coconut Oil
1/4 Cup Pure Maple Syrup 
Extra flour if needed 

Directions: 

Place a sheet of parchment paper on a cookie sheet and set aside.

In a large mixing bowl, combine all dry ingredients and stir very well. 

In a separate bowl, whisk together all liquid ingredients. 

Pour wet into dry and stir to form a dough. 

Roll out chocolate chip oatmeal cookie dough balls by smushing the dough together with your fingers. The dough will be sticky.

If the dough is too sticky add a little bit more flour to make it more manageable to work with. 

Place on the pan, smush down just a little bit. Place the dough in the freezer for about an hour. 

Preheat oven to 350 degrees bake about ten minutes. 

The oatmeal chocolate chip cookies should still look a little undercooked when you remove them from the oven, but they’ll firm up as they cool. 

Set the tray aside for 10 minutes before removing the cookies.
